Meatless Monday is an initiative that encourages families to eliminate meat from their diet one day a week in order to lessen our impact on the environment. Not only is meatless eating great for the environment, it is good for our health as well.

It can be intimidating to branch out and start eating vegetarian meals, but we have a few ideas to get you started along with coupons to help you save.

Breakfasts

Eggs and bacon are traditional breakfast staples but it’s easy to mix things up and have a meatless morning.

Instead of eggs, try a scramble with tofu. The texture is the same as scrambled eggs and it’s just as tasty, we promise!  Tofu scrambles can also be cooked up in bulk at the beginning of the week and re-heated for a super-fast and nutritious breakfast. Check out this starter Tofu Scramble recipe for more information.

If tofu isn’t your thing, smoothies are an easy meatless breakfast that also packs quite the nutritional punch. Smoothie possibilities are endless – combine your favorite fruit and any add-ins like hemps seeds or protein powder and you have a filling and well-rounded breakfast. Replace dairy milk with an alternative like almond or soy milk for even more plant-based goodness. Grab this coupon to Save 55 cents on any So Delicious Dairy Free Product.

Smoothie combo ideas:

  • Strawberry, banana, peanut butter and almond milk
  • Mango, spinach, pineapple and coconut milk
  • Coffee, cocoa powder, protein powder and hemp milk
  • Blueberries, flaxseed, banana and almond milk

Lunch and Dinner

Tofu isn’t the only good meat substitute. There are plenty of ways to replace or eliminate the meat for a day.

Beans are a great substitution for meat in all kinds of recipes. Ground beef can easily be substituted with a variety of beans. Use black beans instead of beef for a plant-based taco night. Consider serving Pinto Bean Burgers for dinner along with a side salad for a veggie-packed dinner option.

Soups like Spicy Cajun Red Bean or Sweet Potato & Black Bean Chili are a comforting and seasonally appropriate way to enjoy a meatless dinner.

If beans aren’t your thing, consider focusing around whole grains. Quinoa is a complete source of protein that is quite versatile. Check out this Quinoa & Apple Stuffed Acorn Squash  or our other easy ways to enjoy quinoa.

Pasta is something we can all agree on – meatless or not. Sit down to pasta with Chunky Tomato Mushroom Sauce  or even a creamy homemade Mac and Cheese.
