Meatless Monday is an initiative that encourages families to eliminate meat from their diet one day a week in order to lessen our impact on the environment. Not only is meatless eating great for the environment, it is good for our health as well.

It can be intimidating to branch out and start eating vegetarian meals, but we have a few ideas to get you started along with coupons to help you save.


Eggs and bacon are traditional breakfast staples but it’s easy to mix things up and have a meatless morning.

Lunch and Dinner

Tofu isn’t the only good meat substitute. There are plenty of ways to replace or eliminate the meat for a day.

Beans are a great substitution for meat in all kinds of recipes. Ground beef can easily be substituted with a variety of beans. Use black beans instead of beef for a plant-based taco night. Consider serving Pinto Bean Burgers for dinner along with a side salad for a veggie-packed dinner option.
